Ingredients

  • 4 large Celery stalks (about 400g / 14oz)
  • 1 medium Green apple, cored (about 182g / 6.4oz)
  • ¼ cup Fresh mint leaves (about 4g / 0.14oz)
  • 2 tablespoons Lemon juice (about 30ml)
  • 1 inch piece Fresh ginger (about 15g / 0.5oz)
  • Ice cubes optional
  • ½ cup Cold water (about 120ml)
  • Erythritol or stevia to taste (optional)

Instructions

  • Rinse the celery stalks and mint leaves thoroughly. Core the green apple and cut it into wedges. Peel the ginger and roughly chop it.
  • Using a juicer, begin by juicing the celery stalks, followed by the green apple wedges, mint leaves, and ginger piece. If you don't have a juicer, blend these ingredients with the cold water in a high-speed blender and then strain the mixture through a fine mesh sieve or cheesecloth to separate the juice.
  • Stir in the fresh lemon juice to the extracted juice. If you desire a sweeter taste, add a small amount of erythritol or stevia, adjusting according to your preference.
  • For an extra refreshing experience, add ice cubes to the juice or refrigerate it for 30 minutes before serving. Pour the juice into glasses and garnish with a sprig of mint or a slice of lemon.
  • Sip on this zesty, hydrating juice as a morning energizer or a midday pick-me-up.

Notes

The green apple can be substituted with another low-carb fruit if preferred. Adjust the amount of mint to control the intensity of the mint flavor.
