Instructions
Begin by thoroughly washing the carrots and peeling them if desired. Roughly chop the carrots into chunks that will be manageable for your blender.
Peel the oranges, ensuring to remove all the pith and seeds, which can add bitterness. Segment the oranges into smaller pieces.
Peel the ginger using the edge of a spoon or a peeler and slice it into a few smaller pieces to make blending easier.
Place the carrots, orange segments, and ginger pieces into a high-powered blender.
Add the powdered erythritol and fresh lemon juice to the blender. The erythritol will provide sweetness without adding any carbohydrates, while the lemon juice will add a bright, tangy flavor.
