Ingredients

For the crust

  • 1 ½ cups almond flour
  • ½ cup unsalted butter melted
  • 1 large egg
  • 1 tsp salt
  • 1 tsp garlic powder

For the filling

  • 2 large onions thinly sliced
  • 4 slices bacon chopped
  • 2 tbsp olive oil
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • ¼ cup heavy cream
  • 1 large egg
  • Salt and pepper to taste
  • Grated cheese of choice for topping (optional)

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the almond flour, melted butter, egg, salt, and garlic powder. Mix until a dough forms.
  • Press the dough evenly into a tartlet pan or mini muffin tin, making sure to cover the bottom and sides. Prick the bottom with a fork to prevent bubbling.
  • Bake the crust for 10-12 minutes, or until lightly golden. Remove from the oven and set aside to cool slightly.
  • In a large skillet over medium heat, add the chopped bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet.
  • Add the sliced onions to the skillet and cook in the bacon fat over medium-low heat, stirring occasionally. Cook for about 20 minutes, or until the onions are deeply caramelized and golden brown. If the onions start to stick, add a splash of water to deglaze the pan.
  • Stir in the thyme, and season with salt and pepper to taste. Remove from heat and let cool slightly.
  • In a mixing bowl, whisk together the heavy cream, egg, and a pinch of salt and pepper.
  • Add the caramelized onions and crispy bacon to the cream mixture, stirring until well combined.
  • Spoon the filling evenly into the pre-baked tartlet crusts. If desired, top with grated cheese for an extra layer of flavor.
  • Bake in the oven for an additional 15-20 minutes, or until the filling is set and the tops are golden brown.
  • Allow the tartlets to cool for a few minutes before removing them from the pan. Serve warm or at room temperature.

Notes

Feel free to experiment with different cheese types for topping, such as goat cheese or cheddar. These tartlets can be prepared in advance and reheated, making them perfect for meal prep or parties.
