  • ½ teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Prepare Ingredients: Start by prepping your vegetables and chicken. Dice the onion, mince the garlic, chop the cabbage, and julienne the carrot if using. Cut the chicken breast into bite-sized chunks.
  • Sauté Onions and Garlic: Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until it's translucent, about 2-3 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  • Brown Chicken: Increase the heat to medium-high and add the chicken pieces to the pot. Season with salt and pepper, and sauté until the chicken is browned on all sides, about 5-6 minutes.
  • Add Liquids and Herbs: Pour in the chicken broth and bring to a simmer. Stir in the chopped cabbage, julienned carrot (if using), thyme, and oregano. Adjust the heat to maintain a gentle simmer.
  • Cook Soup: Let the soup cook for about 15 minutes or until the cabbage is tender and the chicken is cooked through.
  • Season and Serve: Taste and adjust the seasoning with additional salt and pepper if needed. Serve hot, garnished with fresh parsley if desired.

Notes

If you're strictly monitoring your carb intake, you can opt to leave out the carrot to further reduce the carb count.
