Ingredients

Slaw

  • 2 tablespoons thinly sliced red onion (about 1/4 of a small onion or 28g)
  • ¼ cup chopped fresh cilantro (15g)

Citrus Dressing

  • ¼ cup olive oil (60ml)
  • 2 tablespoons apple cider vinegar (30ml)
  • 1 large lemon, juice of (about 3 tablespoons or 45ml)
  • 1 teaspoon grated lemon zest
  • 1 tablespoon powdered erythritol (or another keto-friendly sweetener)
  • ½ teaspoon ground cumin
  • Salt and pepper to taste

Instructions

  • Begin by preparing the slaw ingredients. In a large mixing bowl, combine the shredded green cabbage, julienned carrot, thinly sliced red onion, and chopped cilantro. Toss the mixture gently to ensure all the vegetables are evenly distributed.
  • In a separate small bowl, whisk together the olive oil, apple cider vinegar, fresh lemon juice, lemon zest, powdered erythritol, and ground cumin until the dressing is well combined and the sweetener has dissolved. Season with salt and pepper to your taste.
  • Pour the citrus dressing over the cabbage mixture and toss the slaw until all the vegetables are coated with the dressing. The acidity from the lemon juice will begin to slightly soften the cabbage as it sits.
  • Allow the slaw to sit for about 5 minutes before serving, as this resting period lets the flavors meld together. Give it a final toss right before plating.
