  • 4 large keto-friendly tortillas approx. 8-inch/20cm
  • ¼ cup sour cream
  • ½ cup shredded cheddar cheese
  • ¼ cup diced celery
  • ¼ cup diced red onion
  • ½ avocado, sliced 100g
  • ¼ cup fresh cilantro, chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C). Place the chicken breasts on a baking sheet lined with parchment paper. Drizzle with olive oil, and season with salt and pepper. Bake for 20 minutes or until the internal temperature reaches 165°F (74°C).
  • While the chicken is cooking, prepare the keto-friendly tortillas according to the package instructions or use homemade ones.
  • Once the chicken is cooked, let it rest for a few minutes, then shred it using two forks.
  • In a medium-sized bowl, mix the shredded chicken with buffalo sauce until well coated.
  • To assemble the tacos, lay out the tortillas and evenly distribute the buffalo chicken among them.
  • Top each taco with shredded cheddar cheese, diced celery, diced red onion, avocado slices, and a dollop of sour cream.
  • Garnish with fresh cilantro and serve immediately for the best flavor and texture.

Notes
