Ingredients

  • 2 large avocados, halved and pitted (approx. 200g each)
  • 2 cups cooked chicken, shredded (approx. 280g)
  • ¼ cup buffalo sauce (60ml)
  • ¼ cup cream cheese, softened (60g)
  • ¼ cup shredded cheddar cheese (30g)
  • 2 tbsp ranch dressing (30ml)
  • 2 tbsp chopped green onions (30g)
  • 1 tbsp fresh cilantro, chopped (15g)
  • ½ tsp garlic powder (2.5g)
  • Salt and pepper to taste

Instructions

  • Begin by preparing the avocados. Slice the avocados in half lengthwise and remove the pits. Scoop out some of the flesh to create a larger cavity for the filling, and reserve the scooped-out avocado for another use.
  • In a mixing bowl, combine the shredded chicken with buffalo sauce, garlic powder, salt, and pepper. Mix until the chicken is evenly coated with the sauce.
  • Add the softened cream cheese to the chicken mixture. Stir until the cream cheese is fully incorporated and the mixture is creamy.
  • Fold in the shredded cheddar cheese, ranch dressing, green onions, and cilantro. Mix until all ingredients are well combined.
  • Spoon the buffalo chicken mixture into the hollowed-out avocado halves, dividing it evenly among them.
  • Serve immediately, garnished with additional green onions or cilantro if desired. These can also be chilled for later serving.

Notes

For added texture, you can broil the stuffed avocados for 2-3 minutes until the cheese is bubbly and slightly golden. If buffalo sauce is too spicy, feel free to adjust the amount or mix with a bit of melted butter to tame the heat.
