Ingredients

  • 1 large head broccoli, cut into florets about 1 pound / 450g
  • 4 slices thick-cut bacon, chopped about 4 ounces / 113g
  • 1 medium onion, finely diced about 4 ounces / 113g
  • 3 cloves garlic, minced
  • 1 cup heavy cream 240ml
  • 3 large eggs
  • ½ cup grated Parmesan cheese about 2 ounces / 56g
  • Salt and pepper, to taste
  • 1 tablespoon olive oil 15ml

Instructions

  • Start by steaming the broccoli florets until they are just tender, about 3-4 minutes. Once done, set aside to cool slightly.
  • In a large skillet over medium heat, cook the chopped bacon until it is crispy. Remove the bacon and set aside on a paper towel to drain, leaving the bacon fat in the skillet.
  • Add the diced onion to the skillet with the bacon fat and cook until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add the steamed broccoli florets to the skillet and sauté with the onion and garlic for 2-3 minutes. Remove from heat and set aside.
  • In a mixing bowl, whisk together the heavy cream, eggs, and grated Parmesan cheese until well combined. Season with salt and pepper to taste.
  • Pour the egg and cream mixture over the broccoli in the skillet, and place it over low heat. Cook, stirring continuously, until the sauce thickens and coats the broccoli, about 4-5 minutes.
  • Stir the crispy bacon back into the skillet, mixing well with the broccoli and sauce.
  • Serve immediately, with extra grated Parmesan cheese on top if desired.

You can substitute bacon with pancetta or any other keto-friendly meat of your choice.
For a vegetarian version, omit the bacon and use a high-quality, vegetarian hard cheese.
