Ingredients

  • 1 large head broccoli, cut into florets about 1 pound or 450g
  • 3 tbsp unsalted butter 42g
  • 1 medium onion, chopped about 150g
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth 32 ounces or 950ml
  • 1 cup heavy cream 8 ounces or 240ml
  • 4 ounces blue cheese, crumbled about 113g
  • Salt and pepper to taste
  • Optional garnish: crumbled blue cheese and fresh broccoli florets

Instructions

  • Begin by preparing your ingredients. Wash the broccoli florets and chop your onion and garlic. Make sure to crumble the blue cheese if it's not already done.
  • Heat a large pot over medium heat and melt the unsalted butter. Once melted, add the chopped onions and cook until they are translucent and soft, about 3-4 minutes.
  • Add the minced garlic to the onions and continue to cook for another 1-2 minutes until the garlic is fragrant but not browned.
  • Introduce the broccoli florets to the pot and stir to combine with the onion and garlic. Cook for 2-3 minutes, just enough to begin softening the broccoli.
  • Pour in the chicken or vegetable broth, ensuring that the broccoli is fully submerged. Bring the mixture to a boil, then reduce the heat to a simmer. Allow the soup to cook for about 10-12 minutes, or until the broccoli is very tender.
  • Once the broccoli is tender, remove the pot from the heat. Using an immersion blender, blend the soup directly in the pot until it reaches a smooth consistency. If using a stand blender, carefully transfer the soup in batches and blend until smooth, then return it to the pot.
  • Place the pot back on the stove over low heat and stir in the heavy cream. Allow the soup to heat through without boiling, as this could cause the cream to separate.
  • Gradually add the crumbled blue cheese to the soup, stirring continuously until the cheese is fully melted and incorporated into the soup. Season with salt and pepper to your taste.
  • Once the soup is well-combined and heated through, serve it hot. If desired, garnish with additional crumbled blue cheese and fresh broccoli florets for added texture and flavor.
