Ingredients

Mini Frittatas

  • 4 large eggs 224g
  • ¼ cup heavy cream 60ml
  • ½ cup shredded cheddar cheese 56g
  • ¼ cup chopped spinach 30g
  • ¼ cup diced red bell pepper 40g

Sides

  • 4 slices bacon 112g
  • 1 medium avocado, sliced 150g
  • ½ cup sliced cucumber 52g
  • ½ cup cherry tomatoes, halved 90g
  • 1 tablespoon olive oil 15ml
  • 1 teaspoon lemon juice 5ml

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 4-cup muffin tin with non-stick cooking spray or butter.
  • In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper until well combined. Stir in the shredded cheddar cheese, chopped spinach, and diced red bell pepper.
  • Pour the egg mixture evenly into the prepared muffin cups, filling each about 2/3 full.
  • Bake in the preheated oven for 18-20 minutes, or until the mini frittatas are set and lightly golden on top.
  • While the frittatas are baking, cook the bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate to drain and cool.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to create a simple dressing for the salad.
  • Toss the sliced cucumber and halved cherry tomatoes with the dressing until well coated.
  • Once the mini frittatas are done, allow them to cool for a few minutes before removing them from the muffin tin.
  • Assemble the Keto Breakfast Bento Box by dividing the mini frittatas, crispy bacon, avocado slices, and cucumber-tomato salad evenly between two bento boxes or meal prep containers.
