Ingredients

  • 1 cup fresh blueberries 150g
  • 1 tablespoon lemon zest 6g
  • 2 tablespoons fresh lemon juice 30ml
  • 1 cup heavy whipping cream 240ml
  • ¼ cup powdered erythritol 48g
  • ½ teaspoon vanilla extract 2.5ml
  • ¼ teaspoon xanthan gum 0.6g

Instructions

  • Begin by washing the blueberries and patting them dry. Zest the lemon until you have 1 tablespoon of zest, then juice the lemon for 2 tablespoons of juice.
  • In a blender or food processor, combine the blueberries, lemon zest, and lemon juice. Blend until the mixture is smooth.
  • In a large bowl, pour in the heavy whipping cream and add the powdered erythritol and vanilla extract. Whip the mixture with an electric mixer until it starts to thicken.
  • While continuing to whip, gradually sprinkle in the xanthan gum and keep beating until stiff peaks form, ensuring not to overbeat.
  • Gently fold the blueberry lemon mixture into the whipped cream until well combined and the color is uniform.
  • Spoon the mousse into serving dishes and refrigerate for at least 1 hour to set.
  • Serve chilled, garnished with additional blueberries or a sprinkle of lemon zest if desired.

Notes

You can adjust the sweetness of the mousse by adding more or less erythritol according to your taste preferences.
If you prefer a thicker mousse, refrigerate it for a longer time before serving.
For a dairy-free version, you can substitute the heavy whipping cream with full-fat coconut milk. Keep in mind this will alter the taste slightly.
