Ingredients

  • ½ cup fresh blueberries (74g)
  • 3 tablespoons powdered erythritol (36g)
  • ½ cup water (120ml)
  • 2 tablespoons lemon juice (30ml)
  • 3 tablespoons unflavored gelatin powder (30g)
  • ½ teaspoon liquid stevia (2.5ml)

Instructions

  • Begin by pureeing the blueberries in a blender or food processor until smooth.
  • Transfer the blueberry puree to a saucepan and add the water, lemon juice, and powdered erythritol. Mix well.
  • Sprinkle the gelatin powder over the blueberry mixture, letting it sit for a few minutes to "bloom" or absorb the liquid.
  • Place the saucepan over low heat and stir the mixture gently until the gelatin and erythritol have completely dissolved. Do not let the mixture boil.
  • Remove the saucepan from the heat and stir in the liquid stevia until well combined.
  • Using a pipette or dropper, carefully fill each cavity of the silicone gummy bear molds with the blueberry gelatin mixture.
  • Place the molds in the refrigerator to chill for at least 2 hours, or until the gummy bears are firm to the touch.
  • Once set, gently pop the gummy bears out of the molds and enjoy your Keto Blueberry Gelatin Gummy Bears.

Notes

These gummy bears are best enjoyed fresh but can be stored in an airtight container in the refrigerator for up to 1 week. For a firmer texture, add an additional tablespoon of gelatin.
