Ingredients

  • 200 g Keto bread, cubed 7 oz
  • 150 g Fresh blueberries 5.3 oz
  • 100 g Cream cheese, softened 3.5 oz
  • 4 Eggs, large
  • 240 ml Heavy cream 8 fl oz
  • 120 ml Almond milk, unsweetened 4 fl oz
  • 60 g Erythritol or preferred keto sweetener 2.1 oz
  • 1 tsp Vanilla extract
  • 1 tsp Ground cinnamon
  • ¼ tsp Nutmeg, freshly grated
  • 1 tbsp Butter for greasing

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter.
  • Place the cubed keto bread evenly in the greased baking dish.
  • In a bowl, sprinkle the blueberries over the bread cubes.
  • In a separate bowl, beat the cream cheese until smooth.
  • Add eggs to the cream cheese one at a time, ensuring each is well incorporated before adding the next.
  • Stir in the heavy cream, almond milk, sweetener, vanilla extract, cinnamon, and nutmeg until the mixture is smooth.
  • Pour the cream cheese mixture over the bread and blueberries, ensuring all the bread is coated.
  • Let the casserole sit for about 10 minutes to allow the bread to soak up some of the liquid.
  • Bake for 45 minutes, or until the top is golden brown and the casserole is set.
  • Allow to cool slightly before serving.
