Ingredients

  • 2 cups almond flour (224g / 7.9 oz)
  • cup coconut flour (40g / 1.4 oz)
  • ¼ cup granulated erythritol (48g / 1.7 oz)
  • ½ cup unsalted butter, melted (113g / 4 oz)
  • 1 large egg
  • 8 oz cream cheese, softened (227g)
  • ½ cup powdered erythritol (72g / 2.5 oz)
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries (148g / 5.2 oz)
  • 1 egg yolk, beaten (for egg wash)

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine almond flour, coconut flour, and granulated erythritol.
  • Add the melted butter and egg to the dry ingredients and mix until a dough forms.
  • Divide the dough into 8 equal portions and press each into a small disc on the prepared baking sheet.
  • In another bowl, use a hand mixer or stand mixer to blend the softened cream cheese, powdered erythritol, and vanilla extract until smooth.
  • Spoon a dollop of the cream cheese mixture onto the center of each dough disc, leaving a border around the edges.
  • Place a small handful of blueberries onto the cream cheese mixture of each Danish.
  • Fold the edges of the dough over the filling slightly to create a rustic, tart-like shape.
  • Brush the beaten egg yolk over the dough edges to give the Danishes a golden sheen.
  • Bake for 18-20 minutes or until the Danishes are golden and set.
