Ingredients

Berry filling

  • 3 cups fresh blackberries
  • ¼ cup granulated erythritol
  • 1 tbsp lemon juice
  • ½ tsp xanthan gum
  • ¼ tsp ground cinnamon

Cobbler topping

  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • cup granulated erythritol
  • 1 tsp baking powder
  • ¼ tsp salt
  • ¼ cup unsalted butter, melted
  • 1 large egg
  • ½ tsp vanilla extract

Instructions

  • Preheat your oven to 375°F (190°C).
  • Begin by preparing the berry filling. In a medium-sized bowl, combine the blackberries, erythritol, lemon juice, xanthan gum, and cinnamon. Toss gently to coat the berries evenly and set aside for the flavors to meld.
  • In a separate bowl, whisk together almond flour, coconut flour, erythritol, baking powder, and salt for the cobbler topping.
  • Add the melted butter, egg, and vanilla extract to the dry ingredients. Stir until a consistent dough forms.
  • Transfer the berry mixture into a well-greased 8-inch square baking dish.
  • Crumble the dough evenly over the top of the berry mixture, ensuring the berries are covered.
  • Bake in the preheated oven for 25 minutes, or until the topping is golden brown and the berry filling is bubbling.
  • Remove from the oven and allow to cool slightly before serving. This will enable the berry filling to thicken as it cools.

Notes

For best results, use fresh blackberries, but frozen can also work if thawed and drained.
The xanthan gum helps thicken the berry filling but can be omitted if not available.
Store any leftovers in the refrigerator and reheat before serving for a warm dessert.
The cobbler can be served with a dollop of keto-friendly whipped cream or a scoop of sugar-free vanilla ice cream for an extra indulgent treat.
