Ingredients

  • 1 pound ground beef
  • ½ cup almond flour
  • ¼ cup fresh parsley, finely chopped
  • 1 small onion, grated approx. 110g
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground coriander
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional for spice

Instructions

  • In a large mixing bowl, combine the ground beef and almond flour. Mix until they are just incorporated.
  • Add the finely chopped parsley, grated onion, minced garlic, cumin, smoked paprika, coriander, salt, black pepper, and cayenne pepper to the bowl.
  • Use your hands to mix all the ingredients together until well combined. Be careful not to overwork the meat to ensure the koftas remain tender.
  • Divide the mixture into 8 equal portions. Roll each portion into a sausage shape and thread onto skewers.
  • Preheat the grill to medium-high heat. Once hot, place the skewers on the grill.
  • Cook for about 10 minutes, turning occasionally, until the koftas are browned on all sides and cooked through.
  • Remove from the grill and let rest for a couple of minutes before serving.

Notes

If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
The koftas can be prepared ahead of time and stored in the refrigerator for up to 24 hours before cooking.
Serve with a side of low-carb tzatziki sauce and a fresh salad for a complete keto-friendly meal.
