Ingredients

  • 1 lb ground beef 453g
  • 1 tablespoon olive oil 15ml
  • ½ medium onion, diced about 1/2 cup or 75g
  • 2 cloves garlic, minced
  • 1 teaspoon cumin 2g
  • 1 teaspoon chili powder 2g
  • ½ teaspoon paprika 1g
  • ¼ teaspoon cayenne pepper optional for heat, 0.5g
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese 113g
  • ¼ cup diced tomatoes about 1 medium tomato or 60g
  • ¼ cup diced green bell pepper about 1/4 pepper or 37g
  • ¼ cup chopped fresh cilantro 15g
  • 1 avocado, sliced about 150g
  • ¼ cup sour cream for garnish, 60ml
  • 1 lime, cut into wedges for garnish

Instructions

  • Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
  • Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  • Incorporate the ground beef into the skillet. Break it apart with a spatula and cook until browned, about 5-7 minutes.
  • Drain excess fat from the skillet, then season the beef with cumin, chili powder, paprika, cayenne pepper (if using), and salt and pepper to taste. Stir well to combine.
  • Continue to cook the beef mixture for another 5 minutes to allow the flavors to meld together.
  • While the beef is cooking, prepare the toppings: dice the tomatoes and green bell pepper, chop the cilantro, and slice the avocado.
  • Once the beef is fully cooked and seasoned, remove the skillet from heat. Sprinkle the shredded cheddar cheese over the hot beef mixture and cover the skillet for 2-3 minutes to allow the cheese to melt.
  • To assemble the Keto Beef Enchilada Bowls, divide the beef and melted cheese mixture evenly among four bowls.
  • Top each bowl with the diced tomatoes, green bell pepper, sliced avocado, and chopped cilantro.
  • Garnish with a dollop of sour cream and a wedge of lime on the side.
