Ingredients

  • 1 large head Cauliflower (about 2 lbs / 900 g)
  • 2 tablespoons Olive oil (30 ml)
  • 1 tsp Smoked paprika (5 g)
  • 1 tsp Garlic powder (5 g)
  • 1 tsp Salt (5 g)
  • ½ tsp Black pepper (2 g)
  • ½ cup BBQ sauce (sugar-free) (120 ml)
  • 1 cup Shredded cheddar cheese (100 g)
  • ½ cup Sour cream (120 ml)
  • ¼ cup Sliced jalapeños (25 g)
  • ¼ cup Chopped green onions (15 g)
  • 2 tablespoons Chopped fresh cilantro (optional) (8 g)

Instructions

  • Preheat your oven to 425°F (220°C) to ensure a crispy finish on your nachos.
  • Remove the leaves and stem from the cauliflower. Cut it into bite-sized florets, ensuring they are roughly the same size for even cooking.
  • In a large bowl, combine the cauliflower florets, olive oil, smoked paprika, garlic powder, salt, and black pepper. Toss until the cauliflower is well coated with the seasoning.
  • Spread the seasoned cauliflower evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
  • Once the cauliflower is roasted, remove it from the oven and drizzle the sugar-free BBQ sauce over the top. Sprinkle the shredded cheddar cheese evenly across the cauliflower.
  • Place the baking sheet back in the oven for an additional 5-7 minutes, or until the cheese is melted and bubbling.
