Equipment

  • Baking sheet
  • Parchment paper or silicone baking mat
  • Paper towels
  • Large Bowl
  • Measuring spoons
  • Whisk

Ingredients

  • 2 lbs chicken wings approximately 900g
  • 1 tbsp baking powder
  • ½ tsp salt
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp paprika
  • ¼ tsp ground black pepper
  • ½ cup unsalted butter, melted
  • ¼ cup hot sauce

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat for easy clean-up.
  • Pat the chicken wings dry with paper towels to remove excess moisture. This is crucial for achieving crispy skin.
  • In a large bowl, combine the baking powder, salt, garlic powder, onion powder, paprika, and black pepper.
  • Toss the chicken wings in the spice mixture until they are evenly coated.
  • Arrange the wings in a single layer on the prepared baking sheet, ensuring they are not touching for even cooking.
  • Bake in the preheated oven for 20 minutes. Flip the wings and continue baking for an additional 20 minutes, or until the skin is golden brown and crisp.
  • While the wings are baking, whisk together the melted butter and hot sauce in a bowl.
  • Remove the wings from the oven and place them in a large bowl. Pour the butter and hot sauce mixture over the wings and toss to coat evenly.
  • Serve immediately, with extra hot sauce on the side if desired.

Notes

The key to crispy wings is ensuring they are dry before seasoning and baking. For extra crispiness, place the wings on a wire rack on top of the baking sheet to allow air to circulate around them. Adjust the heat level to your preference by using mild or extra hot sauce. If you’re following a strict keto diet, make sure to use a hot sauce with no added sugars. These wings are best enjoyed fresh but can be stored in the refrigerator for up to 3 days and reheated in the oven.
