Ingredients

  • 1 round brie cheese approximately 8 oz / 227 g
  • 2 cloves garlic minced
  • ¼ cup sliced almonds (30 g)
  • 2 tablespoons olive oil (30 ml)
  • 1 tsp fresh rosemary chopped (or 1/2 teaspoon dried rosemary)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Preheat your oven to 350°F (175°C). This temperature will ensure your brie melts perfectly without burning.
  • In a small skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant but not browned. Stir in the sliced almonds and rosemary, cooking for an additional 3-4 minutes until the almonds are lightly toasted. Remove from heat and set aside.
  • Place the round of brie cheese on a parchment-lined baking sheet. Use a sharp knife to score a shallow crosshatch pattern on the top of the brie (this helps it melt evenly and allows the flavors to penetrate).
  • Evenly spoon the garlic and almond mixture over the scored brie. Make sure to distribute the garlic and almonds well to ensure every bite is flavorful. Season with salt and pepper to taste.
  • Place the baking sheet in the preheated oven and bake for 10-15 minutes. You want the brie to be soft and gooey but not completely melted. Keep an eye on it – when it starts to ooze, it’s ready!
  • Remove from the oven and let it cool for a couple of minutes. Garnish with fresh parsley if desired. Serve warm with keto-friendly crackers, cucumber slices, or veggies for dipping.

Notes

Feel free to experiment with different nuts or herbs to customize the flavor to your liking. Walnuts or pecans can be great substitutes for almonds.
