Ingredients

For the Chicken

  • 4 boneless, skinless chicken breasts approx. 6 ounces or 170 grams each
  • 8 slices bacon approx. 8 ounces or 227 grams
  • 1 tsp garlic powder 3.1 grams
  • 1 tsp paprika 2.3 grams
  • Salt and pepper to taste

For the Avocado Salsa

  • 2 ripe avocados approx. 7 ounces or 200 grams each
  • ½ medium red onion finely chopped, approx. 2 ounces or 57 grams
  • 1 medium tomato diced, approx. 3.5 ounces or 100 grams
  • ¼ cup chopped cilantro 15 grams
  • 1 lime juice of, approx. 2 tablespoons or 30 milliliters
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Season each chicken breast with garlic powder, paprika, salt, and pepper.
  • Wrap each chicken breast with two slices of bacon, securing with toothpicks if necessary.
  • Place the bacon-wrapped chicken breasts on the prepared baking sheet and bake for 30-35 minutes or until the chicken is cooked through and the bacon is crispy.
  • While the chicken is baking, prepare the avocado salsa by combining the diced avocados, red onion, tomato, cilantro, and lime juice in a bowl. Season with salt and pepper to taste and gently mix to combine.
  • Once the chicken is done, remove it from the oven and let it rest for a few minutes.
  • Serve each bacon-wrapped chicken breast topped with a generous portion of avocado salsa.
