Ingredients

  • 2 limes juice of
  • 1 cup unsweetened coconut milk
  • ¼ cup water to adjust consistency
  • 2 tablespoons erythritol or sweetener of choice
  • ½ teaspoon vanilla extract
  • Ice cubes optional, for a thicker and colder smoothie
  • Fresh mint leaves for garnish, optional

Instructions

  • Slice the avocado in half, remove the pit, and scoop out the flesh into a blender.
  • Add the freshly squeezed lime juice, coconut milk, and water to the blender.
  • Incorporate the erythritol and vanilla extract.
  • Blend on high speed until smooth. If the mixture is too thick, add more water until you reach the desired consistency.
  • If preferred, add ice cubes and blend again to chill the smoothie and make it thicker.
  • Taste the smoothie and adjust the sweetness or tartness by adding more sweetener or lime juice if necessary.
  • Pour the smoothie into two glasses and garnish with fresh mint leaves, if using.
