Instructions
Preheat a large skillet or wok over medium-high heat and add avocado oil.
Season the sliced pork shoulder with salt and pepper, then sear in the skillet until browned and cooked through, approximately 6-8 minutes. Remove pork from skillet and set aside.
In the same skillet, melt butter over medium heat and sauté bell pepper and red onion until they begin to soften, about 5 minutes.
Add minced garlic and grated ginger to the skillet and cook until fragrant, about 1 minute.
Return the cooked pork to the skillet with the vegetables. Pour in soy sauce, sesame oil, rice vinegar, and sprinkle with erythritol, stirring to combine.
Sprinkle in the red pepper flakes if using and cook for another 2-3 minutes, allowing the flavors to meld.
Warm the low carb tortillas in a dry pan over medium heat for about 30 seconds on each side.
