Ingredients

For the Keto Ladyfingers

  • 1 cup almond flour (96g)
  • 3 large eggs, separated
  • ¼ cup erythritol (48g)
  • ½ tsp cream of tartar
  • 1 tsp vanilla extract

For the Filling

  • 1 ½ cups mascarpone cheese (340g)
  • 1 cup heavy whipping cream (240ml)
  • cup powdered erythritol (64g)
  • 2 tbsp amaretto liqueur or amaretto-flavored sugar-free syrup (30ml)
  • 1 tsp almond extract
  • 2 tbsp unsweetened cocoa powder for dusting

Instructions

  • Start by preheating your oven to 350°F (175°C) and lining a baking sheet with parchment paper.
  • Prepare the keto ladyfingers by combining the almond flour and erythritol in a mixing bowl.
  • In a separate bowl, beat the egg whites with the cream of tartar until stiff peaks form.
  • In another bowl, whisk the egg yolks with the vanilla extract until smooth.
  • Gently fold the beaten egg whites into the egg yolk mixture, then carefully fold in the almond flour mixture until just combined, being careful not to deflate the whites.
  • Pipe the mixture onto the prepared baking sheet into 3-inch long ladyfinger shapes, leaving space between each.
  • Bake for 15 minutes or until lightly golden. Allow to cool completely.
  • For the filling, beat the mascarpone cheese, heavy cream, powdered erythritol, amaretto, and almond extract in a bowl until it forms a smooth and thick consistency.
  • Dip each ladyfinger quickly into a bowl of water or coffee (if you prefer a traditional coffee flavor) and layer them at the bottom of a serving dish.
  • Spread half of the amaretto mascarpone mixture over the ladyfingers.
  • Add another layer of dipped ladyfingers on top of the cream layer.
  • Finish with the remaining cream and smooth the top.
  • Refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the tiramisu to set.
  • Before serving, dust the top with the unsweetened cocoa powder.

Notes

For an alcohol-free version, use a sugar-free amaretto-flavored syrup instead of amaretto liqueur. To maintain keto-friendly status, ensure all ingredients, especially cocoa powder and flavorings, are sugar-free. This dessert is best served chilled and can be stored in the refrigerator for up to 3 days. Remember that erythritol's carbs are not counted towards net carbs as they do not impact blood sugar levels.
