Ingredients

  • 1 lb ground chicken (450 g)
  • ½ cup cream cheese softened
  • ½ cup shredded cheddar cheese
  • ¼ cup diced jalapeños (fresh or pickled)
  • 2 cloves garlic minced
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup almond flour (optional for binding)
  • 4 large lettuce leaves (for serving)
  • 4 slices bacon (optional)
  • Olive oil (for cooking)

Instructions

  • In a large mixing bowl, combine the ground chicken, softened cream cheese, shredded cheddar cheese, diced jalapeños, minced garlic, onion powder, smoked paprika, salt, and black pepper. If the mixture feels too wet, add the almond flour to help bind it together.
  • Divide the mixture into four equal portions and shape each portion into a burger patty, about 1 inch thick. Make a slight indentation in the center of each patty to prevent them from puffing up while cooking.
  • If using bacon, cook the slices in a skillet over medium heat until crispy. Remove and place on paper towels to drain excess fat.
  • In the same skillet (or a grill), heat a tablespoon of olive oil over medium heat.
  • Add the chicken patties to the skillet. Cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the patties are golden brown. If using bacon, you can place a slice on top of each patty during the last minute of cooking to warm it through.
  • Place each cooked patty on a large lettuce leaf. Top with additional jalapeños or cheese if desired, and wrap the lettuce around the patty like a taco.

Notes
