Ingredients

  • 1 medium head cauliflower riced, approx. 1 lb or 450g
  • 12 oz large shrimp peeled and deveined
  • 8 oz firm white fish cut into 1-inch pieces
  • 6 oz chorizo sausage sliced
  • ½ cup chicken broth
  • ¼ cup white wine optional
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 red bell pepper sliced
  • ½ cup frozen peas thawed
  • ¼ cup lemon juice
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp saffron threads
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

  • Turn on the Instant Pot and select the 'Sauté' function. Add the olive oil, onion, and garlic, and cook until the onion is translucent, about 3 minutes.
  • Add the chorizo slices to the pot and sauté until they start to brown, approximately 2 minutes.
  • Stir in the smoked paprika, saffron threads, salt, and pepper, cooking for another minute to release the flavors.
  • Pour in the white wine (if using) and chicken broth, scraping any browned bits off the bottom of the pot.
  • Mix in the riced cauliflower, ensuring it is well combined with the broth and spices.
  • Evenly distribute the shrimp, white fish, and red bell pepper on top of the cauliflower rice. Do not stir.
  • Close the lid of the Instant Pot and set the valve to 'Sealing.' Cook on high pressure for 5 minutes.
  • Once the cooking time is complete, quickly release the pressure and carefully remove the lid.
  • Gently stir in the lemon juice and thawed peas, allowing the residual heat to warm through the peas and finish cooking the seafood.
  • Taste and adjust seasoning if necessary, then serve hot, garnished with fresh parsley.

Notes

If you don't have saffron, turmeric can be used as a substitute, though the flavor will be slightly different.
Ensure your seafood is thawed if using frozen options.
For a spicier kick, add a pinch of cayenne pepper or diced chili with the garlic and onions.
The white wine is optional and can be omitted for a stricter keto diet.
