Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • ½ cup chicken broth
  • ¼ cup dry white wine or additional chicken broth for alcohol-free version
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon unsalted butter
  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • 1 Zest of lemon
  • 2 tablespoons fresh lemon juice

Instructions

  • Set your Instant Pot to the 'Sauté' function and heat the olive oil.
  • Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  • Pour in the chicken broth and white wine, then let the mixture simmer for 2 minutes to reduce slightly.
  • Stir in the heavy cream, Parmesan cheese, and butter, continuing to sauté until the butter has melted and the sauce begins to thicken.
  • Season the shrimp with salt and pepper, then add them to the pot. Cook for 2-3 minutes, or until the shrimp turn pink and opaque.
  • Cancel the 'Sauté' function, then stir in the parsley, red pepper flakes (if using), lemon zest, and lemon juice.
  • Serve immediately, garnished with extra parsley and Parmesan if desired.
