Ingredients

  • 3 lbs sirloin tip roast
  • 2 tbsp olive oil
  • 2 tbsp fresh rosemary finely chopped
  • 2 tbsp fresh thyme finely chopped
  • 4 cloves garlic minced
  • 1 tbsp sea salt
  • 1 tsp black pepper freshly ground
  • 1 tsp mustard powder
  • ½ tsp onion powder
  • ½ tsp paprika

Instructions

  • Preheat your oven to 375°F (190°C). Place the oven rack in the middle position.
  • In a small bowl, combine the chopped rosemary, thyme, minced garlic, sea salt, black pepper, mustard powder, onion powder, and paprika to create the herb crust mixture.
  • Pat the sirloin tip roast dry with paper towels. This will help the herbs and seasonings adhere better to the meat.
  • Rub the olive oil over the entire surface of the roast. Then, evenly coat the roast with the herb mixture, pressing gently to make sure it sticks.
  • Place the herb-coated roast on a rack in a roasting pan. Insert a meat thermometer into the thickest part of the roast.
  • Roast in the preheated oven for approximately 1 hour and 30 minutes, or until the meat thermometer reads 135°F (57°C) for medium-rare.
  • Remove the roast from the oven and let it rest for 15-20 minutes before slicing. This allows the juices to redistribute throughout the meat, ensuring a moist and flavorful roast.
  • Slice against the grain and serve.

Notes

Letting the roast sit at room temperature for about 30 minutes before cooking can help ensure more even cooking. For those who prefer their meat more or less done, adjust the final internal temperature to your liking (145°F for medium, 160°F for medium-well). Leftover roast can be sliced thinly for a delicious keto-friendly sandwich alternative or salad topping.
