Ingredients

  • 1.5 lbs beef sirloin thinly sliced
  • 3 tbsp olive oil divided
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 8 oz white mushrooms sliced
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tbsp Dijon mustard
  • 2 tsp Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley chopped for garnish

Instructions

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the sliced beef in a single layer and sear until browned on both sides. Do this in batches to prevent overcrowding. Once browned, transfer the beef to a plate and set aside.
  • In the same skillet, add the remaining tablespoon of olive oil, followed by the chopped onions. Sauté until translucent, about 3 minutes. Add the minced garlic and cook for an additional minute.
  • Add the sliced mushrooms to the skillet and sauté until they release their moisture and begin to brown, about 5 minutes.
  • Return the beef along with any accumulated juices to the skillet. Pour in the beef broth, and let the mixture come to a simmer. Reduce the heat and cook for 10 minutes, allowing the flavors to meld together.
  • Stir in the sour cream, Dijon mustard, and Worcestershire sauce. Season with salt and pepper to taste. Simmer for an additional 5 minutes or until the sauce has thickened to your liking.
  • Remove from heat, garnish with fresh parsley, and serve hot over cauliflower rice or zucchini noodles for a complete keto-friendly meal.

Notes

To further reduce the carb content, you can omit the onions and increase the quantity of mushrooms. For a dairy-free version, use coconut cream instead of sour cream, but keep in mind this will slightly alter the flavor profile. Always consult with a nutritionist if you're strictly monitoring your macros.
