Ingredients

  • 1 pound ground beef
  • 4 medium zucchini spiralized
  • ½ cup pesto homemade or store-bought

  • ½ teaspoon onion powder
  • ¼ teaspoon red pepper flakes optional
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  • Season the ground beef with garlic powder, onion powder, red pepper flakes, salt, and pepper. Stir to combine and cook for an additional 2 minutes.
  • In the meantime, place spiralized zucchini noodles in a microwave-safe bowl and microwave for 2 minutes, or until just slightly softened. Alternatively, you can sauté the noodles in a separate pan with a touch of olive oil for 2-3 minutes for a firmer texture.
  • Drain any excess fat from the skillet with the ground beef, and then stir in the pesto until well combined and heated through.
  • Add the zucchini noodles to the skillet with the beef and pesto mixture, gently tossing to coat the noodles evenly. Cook for an additional 2 minutes, or until everything is heated through.
  • Taste and adjust seasoning if necessary.
  • Serve hot, garnished with fresh basil leaves and grated Parmesan cheese if desired.

To keep this dish fresh and prevent sogginess, it's best to serve immediately. If you have leftovers, store the beef and zucchini noodles separately when possible, and reheat gently.
