Ingredients

  • 1 ½ cups shredded mozzarella cheese
  • ½ cup almond flour
  • 2 oz cream cheese
  • 1 large egg
  • 2 tsp baking powder
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ cup grated Parmesan cheese
  • 2 tbsp olive oil (for brushing)
  • 1 tsp dried parsley (optional, for garnish)

Instructions

  • Begin by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
  • In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave on high for 30-second intervals, stirring in between, until the cheeses are completely melted and smooth. This should take about 1-2 minutes total.
  • In a separate mixing bowl, combine the almond flour, baking powder, garlic powder, onion powder, and salt. Stir well to ensure all the dry ingredients are evenly distributed.
  • Add the melted cheese mixture to the dry ingredients. Crack in the egg and mix everything together until a dough forms. It will be slightly sticky but should hold together.
  • With clean hands, divide the dough into 12 equal portions. Roll each portion into a long stick, about 6 inches long and ½ inch thick. Place the breadsticks on the prepared baking sheet, leaving some space between each stick.
  • Brush the tops of the breadsticks with olive oil. Sprinkle the grated Parmesan cheese evenly over each stick. For an added flavor boost, you can also sprinkle a bit of garlic powder over the top.
  • Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the breadsticks are golden brown and firm to the touch.
  • If desired, sprinkle the baked breadsticks with dried parsley for a touch of color. Allow them to cool slightly before serving. These breadsticks are best enjoyed warm.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving for the best taste and texture. Feel free to experiment with different herbs and spices. Adding Italian seasoning or crushed red pepper for a spicy kick can elevate the flavor profile!
