Ingredients

  • 1 cup green olives pitted
  • 4 oz fresh mozzarella cheese cut into small cubes
  • ½ cup almond flour
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika
  • salt and pepper to taste
  • Oil for frying avocado or coconut oil recommended

Instructions

  • Start by pitting the green olives if they aren’t already pitted. Using a small knife, carefully make a slit in each olive, just enough to create a pocket without splitting it in half.
  • Take the small cubes of fresh mozzarella and gently insert them into each olive. Aim for a snug fit, ensuring the cheese is completely enclosed within the olive.
  • In a shallow bowl, whisk the egg until well combined. In another bowl, mix together the almond flour, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
  • Dip each stuffed olive into the egg mixture, allowing any excess to drip off. Then, roll the olive in the almond flour mixture, ensuring it's evenly coated. Repeat this for all the olives.
  • In a large skillet, pour enough oil to cover the bottom (about 1/4 inch deep) and heat it over medium-high heat. You can test if the oil is ready by dropping a small amount of the breading into the oil; it should sizzle immediately.
  • Carefully add the breaded olives to the hot oil in batches, being cautious not to overcrowd the skillet. Fry them for about 2-3 minutes on each side, or until they are golden brown and crispy.
  • Once fried, use a slotted spoon to transfer the olives to a paper towel-lined plate to drain excess oil. Serve warm, and enjoy the melty mozzarella center with a crunchy outer layer.

Notes

Feel free to customize the spices in the breading to suit your taste! You can also experiment with different types of cheese for stuffing. These Fried Keto Mozzarella-Stuffed Olives are best enjoyed fresh but can be reheated in an air fryer for a few minutes to regain their crispiness.
