Equipment

  • Mixing bowls
  • Shallow bowls for breading
  • Frying pan
  • Slotted spoon
  • Paper towels

Ingredients

  • 8 oz cream cheese softened
  • 1 cup shredded cheddar cheese
  • 12 dill pickles whole
  • 1 cup almond flour
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • Salt and pepper to taste
  • Oil for frying such as avocado or olive oil

Instructions

  • In a large mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Mix well until the cheeses are fully incorporated and smooth.
  • Pat the dill pickles dry with paper towels to remove excess moisture. This helps ensure a crispy coating later.
  • Take a slice of pickle and spread a generous amount of the cheese mixture over it. Roll the pickle tightly in the cheese, ensuring that it is fully encased. Repeat this process for all pickles.
  • In one shallow bowl, place the almond flour. In another bowl, whisk the eggs together with garlic powder, onion powder, paprika, salt, and pepper.
  • Dip each cheese-covered pickle roll into the egg mixture, allowing any excess to drip off. Then, roll it in the almond flour, ensuring an even coating. Set aside on a plate.
  • In a large frying pan, heat about 1/2 inch of oil over medium heat. To test if the oil is ready, drop a small amount of almond flour into the oil; if it sizzles, the oil is hot enough.
  • Carefully place the coated pickle roll-ups into the hot oil, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side or until they are golden brown and crispy.
  • Once fried, use a slotted spoon to remove the roll-ups from the oil and place them on a paper towel-lined plate to drain excess oil. Serve warm with your favorite dipping sauce, such as ranch or sugar-free ketchup.

Notes

Feel free to experiment with different types of cheese or spices to customize the flavor of your Fried Cheese Pickle Roll-Ups. These are best enjoyed fresh but can be reheated in an oven to regain their crispiness if necessary.
