Ingredients

  • 1 medium head cauliflower (about 1 lb / 450 g), riced
  • 1 tablespoon sesame oil (15 ml)
  • 1 tablespoon soy sauce or coconut aminos (15 ml)
  • 1 teaspoon rice vinegar (5 ml)
  • 1 teaspoon sriracha (optional) (5 ml)
  • ½ cup green onions finely chopped (50 g)
  • ½ cup avocado diced (75 g)
  • ¼ cup cream cheese softened (60 g)
  • ¼ cup nori sheets cut into small strips (10 g)
  • ½ cup almond flour (50 g)
  • 1 large egg beaten
  • Salt and pepper to taste

Instructions

  • Prepare the Cauliflower Rice: Begin by removing the leaves and stem from the cauliflower. Cut it into florets and pulse in a food processor until it resembles rice. You can also use pre-riced cauliflower for convenience.
  • Cook the Cauliflower Rice: In a large skillet, heat the sesame oil over medium heat. Add the riced cauliflower and sauté for about 5-7 minutes until tender. Stir in the soy sauce, rice vinegar, and sriracha (if using). Cook for an additional 2 minutes, then remove from heat and let it cool slightly.
  • Mix the Filling: In a large mixing bowl, combine the cooled cauliflower rice, chopped green onions, diced avocado, and softened cream cheese. Season with salt and pepper to taste. Mix well until fully combined.
  • Form the Sushi Balls: With clean hands, take a small amount of the cauliflower mixture and form it into a ball, about the size of a golf ball. Repeat until all the mixture is used.
  • Coat the Sushi Balls: Place the almond flour in a shallow dish. Roll each cauliflower ball in the almond flour until well coated. This will give them a nice crispy texture when fried.
  • Fry the Sushi Balls: In a deep skillet or frying pan, heat oil over medium-high heat (about 350°F / 175°C). Carefully add the sushi balls in batches, ensuring not to overcrowd the pan. Fry for 3-4 minutes on each side until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.
  • Serve: Arrange the Fried Cauliflower Rice Sushi Balls on a serving platter. Garnish with nori strips and additional green onions if desired. Serve warm with extra soy sauce or dipping sauce of your choice.
