Ingredients

  • 2 medium ripe avocados (approximately 400g)
  • 1 cup almond flour (100g)
  • ¼ cup coconut flour (30g)
  • ¼ cup erythritol or preferred keto sweetener (50g)
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • Oil for frying (avocado oil or coconut oil)
  • Optional: Additional erythritol and cinnamon for dusting

Instructions

  • Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl. Mash the avocado until smooth using a fork or a potato masher.
  • In a separate bowl, combine the almond flour, coconut flour, erythritol, baking powder, cinnamon, and salt. Whisk together until well-blended.
  • Add the mashed avocado, egg, and vanilla extract to the dry ingredients. Stir until a dough forms. It should be slightly sticky but manageable.
  • Transfer the dough into a piping bag fitted with a large star tip. Pipe 4-6 inch long churros directly onto a parchment-lined baking sheet.
  • In a deep frying pan or pot, heat about 2 inches of oil over medium heat. To check if the oil is ready, drop a small piece of dough into the oil; it should sizzle and rise to the surface.
  • Carefully place a few churros into the hot oil, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side, or until golden brown. Use a slotted spoon to remove them and drain on paper towels.
  • While still warm, mix additional erythritol and cinnamon in a small bowl. Roll the fried churros in this mixture to coat them evenly.

Notes
