Ingredients

  • 4 bone-in, skin-on chicken thighs (1.5 lbs / 680 grams)
  • 2 tbsp olive oil (30 ml)
  • 2 tsp ground cumin (4 grams)
  • 1 tsp smoked paprika (2 grams)
  • ½ tsp garlic powder (1 gram)
  • ½ tsp onion powder (1 gram)
  • ¼ tsp cayenne pepper (0.5 grams) (optional, adjust to taste)
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, combine the ground cumin, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper to create the spice rub.
  • Pat the chicken thighs dry with paper towels to ensure proper seasoning adherence and crisp skin.
  • Rub each chicken thigh evenly with olive oil, then generously apply the spice mixture, massaging it into the skin and under it when possible.
  • Place the seasoned chicken thighs on a baking sheet lined with parchment paper or in a lightly greased cast-iron skillet.
  • Bake in the preheated oven for 35-40 minutes, or until the chicken has reached an internal temperature of 165°F (74°C) and the skin is crispy.
  • Remove the chicken from the oven and let it rest for 5 minutes before serving to allow the juices to redistribute.

Notes

For additional flavor, consider marinating the chicken thighs in the spice rub and olive oil for 1 hour or overnight in the refrigerator.
If you prefer a spicier dish, increase the amount of cayenne pepper as desired.
The skin of the chicken should be crispy and golden-brown when done. If needed, place the chicken under the broiler for the final 2-3 minutes of cooking to achieve extra crispiness.
