  • 1 tablespoon olive oil (15 ml)
  • 2 teaspoons taco seasoning (homemade or store-bought)
  • Salt and pepper to taste

Toppings

  • 1 cup shredded lettuce (30 g)
  • 1 medium tomato diced (150 g)
  • ½ cup sour cream (120 g)
  • ½ cup shredded cheese (optional)
  • ¼ cup sliced jalapeños (optional)
  • Fresh cilantro chopped (for garnish)

Instructions

  • In a non-stick skillet, combine the shredded mozzarella and cheddar cheese over medium heat. Stir continuously until the cheese melts and forms a cohesive mixture, about 3-5 minutes.
  • Once melted, use a spatula to spread the cheese evenly into a flat circle, about 6 inches in diameter. Cook until the edges start to turn golden brown and the cheese is crispy, approximately 2-3 minutes.
  • Carefully flip the cheese circle using a spatula and cook for an additional 1-2 minutes on the other side. Once done, remove from the skillet and place on a plate lined with paper towels. Repeat with the remaining cheese.
  • In the same skillet, add olive oil and heat over medium-high. Add the ground beef and cook until browned, about 5-7 minutes. Drain any excess fat.
  • Sprinkle taco seasoning, salt, and pepper over the beef, mixing well to combine. Add a splash of water if needed to help the seasoning blend. Cook for an additional 2-3 minutes until heated through.
  • Take a crispy cheese shell and fill it with a generous amount of the seasoned ground beef mixture. Top with shredded lettuce, diced tomatoes, sour cream, shredded cheese, jalapeños, and fresh cilantro as desired.
