Ingredients

  • 4 boneless, skinless chicken breasts about 1.5 lbs or 680 grams
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup sliced mushrooms
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped
  • ½ tsp dried thyme

Instructions

  • Season the chicken breasts evenly with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-7 minutes on each side or until golden brown and cooked through. Remove chicken from the skillet and set aside.
  • In the same skillet, reduce heat to medium. Add butter and minced garlic, sautéing until fragrant, about 1 minute.
  • Stir in the sliced mushrooms and cook for another 3-5 minutes, until mushrooms are tender and browned.
  • Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom of the skillet.
  • Add the heavy cream, Parmesan cheese, parsley, and thyme, stirring continuously. Bring the sauce to a simmer and let it thicken for about 5 minutes.
  • Return the chicken breasts to the skillet, spooning the sauce over them. Cook for an additional 3-4 minutes, ensuring the chicken is heated through and the sauce has coated the chicken well.
  • Garnish with extra parsley if desired and serve hot.

Notes

For a thicker sauce, you can mix in a keto-friendly thickener like xanthan gum, using a pinch at a time until the desired consistency is reached.
Feel free to swap out the mushrooms for other low-carb vegetables like spinach or asparagus for variety.
