Ingredients

  • 2 pounds chicken breast, cooked and shredded (about 900g)
  • 1 tablespoon olive oil (15ml)
  • 1 medium cauliflower, cut into florets (about 500g)
  • 1 cup cheddar cheese, shredded (approx. 113g)
  • ½ cup heavy cream (120ml)
  • 4 ounces cream cheese, softened (about 113g)
  • ¼ cup chicken broth (60ml)
  • 1 tablespoon garlic powder (10g)
  • 1 teaspoon onion powder (2g)
  • 1 teaspoon paprika (2g)
  • Salt and pepper to taste
  • ½ cup mozzarella cheese, shredded for topping (about 56g)
  • Fresh parsley, chopped for garnish (optional)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add the cauliflower florets and sauté until they begin to soften, about 5-7 minutes.
  • Reduce the heat to low and add the heavy cream, cream cheese, chicken broth, garlic powder, onion powder, paprika, salt, and pepper to the skillet with the cauliflower. Stir until the cream cheese is melted and the mixture is well combined.
  • Stir in the shredded chicken and cheddar cheese until everything is evenly coated with the creamy sauce.
  • Transfer the chicken and cauliflower mixture to a greased 9x13 inch casserole dish. Spread it out evenly.
  • Sprinkle the shredded mozzarella cheese on top of the casserole.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown on top.
  • Garnish with fresh parsley, if desired, before serving.

Notes

For a spicier version, add red pepper flakes or diced jalapeños to the cheese sauce. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Ensure all the cream cheese is fully melted into the sauce to avoid lumps. Feel free to swap out the cheddar for other keto-friendly cheeses like Gouda or Monterey Jack for a different flavor profile. If you prefer a crunchier topping, consider adding a layer of crushed pork rinds mixed with parmesan cheese on top before baking.
