Preheat your oven to 350°F (175°C).
In a large bowl, combine the ground beef and crushed pork rinds until well mixed.
Add the eggs, chopped onion, bell pepper, Worcestershire sauce, 1/4 cup of ketchup, garlic powder, onion powder, thyme, salt, and pepper to the beef mixture. Mix until all ingredients are evenly distributed.
Transfer the mixture to a loaf pan or shape it into a loaf on a baking sheet lined with parchment paper.
In a small bowl, whisk together the ingredients for the glaze: 1/2 cup of ketchup, apple cider vinegar, sweetener, and hot sauce (if using).
Spread half of the glaze evenly over the top of the meatloaf.
Bake in the preheated oven for 50-60 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
Halfway through the cooking time, spread the remaining glaze over the meatloaf and continue baking.
Once done, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.
