Ingredients

  • 2 lbs Ground beef, 80/20
  • 1 cup Pork rinds, crushed
  • 2 Large eggs
  • ½ cup Yellow onion, finely chopped
  • ½ cup Green bell pepper, finely chopped
  • 2 tablespoons Worcestershire sauce
  • ¼ cup Unsweetened ketchup
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • ½ teaspoon Dried thyme
  • 1 teaspoon Sea salt
  • ½ teaspoon Ground black pepper

For the glaze:

  • ½ cup Unsweetened ketchup
  • 1 tablespoon Apple cider vinegar
  • 2 tablespoons Erythritol or another keto-friendly sweetener
  • 1 teaspoon Hot sauce (optional)

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the ground beef and crushed pork rinds until well mixed.
  • Add the eggs, chopped onion, bell pepper, Worcestershire sauce, 1/4 cup of ketchup, garlic powder, onion powder, thyme, salt, and pepper to the beef mixture. Mix until all ingredients are evenly distributed.
  • Transfer the mixture to a loaf pan or shape it into a loaf on a baking sheet lined with parchment paper.
  • In a small bowl, whisk together the ingredients for the glaze: 1/2 cup of ketchup, apple cider vinegar, sweetener, and hot sauce (if using).
  • Spread half of the glaze evenly over the top of the meatloaf.
  • Bake in the preheated oven for 50-60 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
  • Halfway through the cooking time, spread the remaining glaze over the meatloaf and continue baking.
  • Once done, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

Notes

For an even lower carb count, you can reduce the onion and bell pepper or substitute with other keto-friendly vegetables.
The meatloaf can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
Reheat slices in the oven or microwave until warmed through.
Feel free to customize the glaze with additional spices or a sugar-free barbecue sauce to suit your taste preferences.
