Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • ½ cup sour cream
  • 2 medium zucchinis, spiralized into noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Heat olive oil in a large skillet over medium-high heat. Season the sliced beef with salt and pepper, then add to the skillet and cook until browned. Remove the beef and set aside.
  • In the same skillet, add the chopped onions and garlic, sautéing until the onions are translucent.
  • Add the sliced mushrooms to the skillet and continue to cook until the mushrooms have softened and browned.
  • Pour in the beef broth, Worcestershire sauce, and Dijon mustard, stirring to combine. Bring the mixture to a simmer.
  • Reduce heat to low and return the beef to the skillet. Simmer for 20 minutes, allowing the flavors to meld together.
  • Stir in the sour cream and heat through. Adjust seasoning with salt and pepper if needed.
  • While the stroganoff is simmering, prepare the zucchini noodles by sautéing them in a separate pan for 2-3 minutes, just until tender.
  • Divide the zucchini noodles among plates and top with the beef stroganoff. Garnish with fresh parsley if desired.

Notes

For a dairy-free version, you can substitute coconut cream for sour cream. Adjust the carb count if you use a different type of mushroom or onion, as these can vary in carbohydrate content.
