Ingredients

  • 1 cup almonds, chopped
  • 1 cup pecans, chopped
  • ½ cup sunflower seeds
  • ½ cup unsweetened shredded coconut
  • ¼ cup coconut oil, melted
  • ¼ cup sugar-free maple syrup or keto sweetener of choice
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
  • ½ tsp salt
  • ¼ cup chia seeds

Instructions

  • Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper to prevent sticking.
  • In a large mixing bowl, combine the chopped almonds, chopped pecans, sunflower seeds, shredded coconut, chia seeds, ground cinnamon, and salt. Stir well to ensure the spices are evenly distributed.
  • In a separate bowl, whisk together the melted coconut oil, sugar-free maple syrup, and vanilla extract until well combined.
  • Pour the wet mixture over the dry ingredients. Use a spatula to mix everything together until the nuts and seeds are thoroughly coated with the syrup mixture.
  • Spread the mixture evenly onto the prepared baking sheet. Use your hands to press it down firmly, ensuring it holds together as clusters.
  • Place the baking sheet in the preheated oven and bake for 15-20 minutes or until the clusters are golden brown. Keep an eye on them to prevent burning, stirring halfway through for even cooking.
  • Once baked, remove the granola clusters from the oven and let them cool completely on the baking sheet. As they cool, they will harden. Once cool, break them into clusters of your desired size.
  • Transfer the clusters to an airtight container. They can be stored at room temperature for up to a week or in the refrigerator for longer freshness.

Notes

For added flavor, consider incorporating a few tablespoons of cocoa powder or a handful of unsweetened dark chocolate chips. Adjust the sweetness to your taste by adding more or less sugar-free syrup. Enjoy these clusters on their own or with a dollop of Greek yogurt for a delicious breakfast!
