Ingredients

  • 4 cups pork rinds (100g)
  • 1 cup sugar-free dark chocolate chips (170g)
  • 2 tablespoons coconut oil (30ml)
  • 1 tsp vanilla extract (5ml)
  • ¼ tsp sea salt (1.5g)
  • ¼ cup chopped nuts (optional) (e.g., pecans or almonds)

Instructions

  • Line a baking sheet with parchment paper.
  • In a medium microwave-safe bowl, combine the sugar-free dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth.
  • Stir in the vanilla extract and sea salt.
  • In a large mixing bowl, add the pork rinds. Pour the melted chocolate mixture over the pork rinds and gently stir until all the pork rinds are evenly coated.
  • Using a spoon or your hands, scoop out small portions of the mixture and form clusters on the prepared baking sheet.
  • Place the baking sheet in the refrigerator for about 10-15 minutes or until the chocolate hardens completely.
  • Once set, remove the clusters from the parchment paper and enjoy!

Notes
