Ingredients

  • 2 pieces ripe avocados (about 400g)
  • ½ cup unsweetened cocoa powder (50g)
  • ¼ cup unsweetened almond milk (60ml)
  • ¼ cup erythritol or preferred keto sweetener (50g)
  • 1 tsp vanilla extract
  • ¼ tsp sea salt
  • 8 slices bacon (about 240g)
  • ¼ cup dark chocolate chips (sugar-free if desired, 40g)

  • chopped nuts or coconut flakes for garnish

Instructions

  • Preheat your oven to 400°F (200°C).
  • Arrange the bacon slices around the edges of a muffin tin to form a cup shape. Bake for about 15-20 minutes or until crispy. Let cool slightly.
  • In a mixing bowl, combine the avocado flesh, cocoa powder, almond milk, erythritol, vanilla extract, and sea salt. Blend until smooth and creamy.
  • Carefully remove the bacon cups from the muffin tin and fill them with the chocolate avocado mixture.
  • Melt the dark chocolate chips in a microwave-safe bowl and drizzle over the filled bacon cups.
  • Garnish with chopped nuts or coconut flakes if desired. Serve immediately or refrigerate.
