Ingredients

  • 1 medium head cauliflower (about 2 lbs / 900 g), riced
  • 2 large eggs
  • ½ cup almond flour
  • ¼ cup grated Parmesan cheese
  • ¼ cup fresh cilantro chopped
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon lime juice
  • 1 teaspoon lime zest of 1 lime
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions

  • Begin by removing the leaves and stem from the cauliflower. Cut it into florets and place them in a food processor. Pulse until the cauliflower resembles rice or small grains. If you don't have a food processor, you can grate the cauliflower using a box grater.
  • Transfer the riced cauliflower to a microwave-safe bowl and cover it with a damp paper towel. Microwave on high for about 4-5 minutes until tender. Allow it to cool slightly, then transfer it to a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible to prevent soggy fritters.
  • In a large mixing bowl, combine the riced cauliflower, eggs, almond flour, grated Parmesan, chopped cilantro, chili powder, garlic powder, onion powder, lime juice, lime zest, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
  • Using your hands, take a handful of the mixture and form it into small patties, about 2-3 inches in diameter. Press them firmly to ensure they hold together.
  • In a large skillet, heat the olive oil over medium heat. Once the oil is hot, carefully place the fritters in the skillet, ensuring not to overcrowd the pan.
  • Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy. You may need to adjust the heat to prevent burning.
  • Once cooked, remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil. Serve warm, garnished with additional lime wedges or cilantro if desired.

Notes

These fritters can be stored in an airtight container in the refrigerator for up to 3 days. Reheat them in a skillet or oven to maintain their crispiness. Feel free to customize the spices to your liking or add a dipping sauce for an extra kick!
