Ingredients

  • 1 lb ground chicken (450g)
  • 2 medium zucchini (about 1 lb / 450g), grated
  • 1 large egg
  • ½ cup almond flour (50g)
  • ¼ cup grated Parmesan cheese (25g)
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons olive oil for frying (30ml)

Instructions

  • Begin by preparing your zucchini. Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure your fritters are not soggy.
  • In a large mixing bowl, combine the ground chicken, wrung-out zucchini, egg, almond flour, grated Parmesan, minced garlic, salt, black pepper, and paprika. Mix thoroughly until all ingredients are well incorporated.
  • Heat the olive oil in a large non-stick skillet over medium heat.
  • Form the mixture into patties, using about 1/4 cup of the mixture for each fritter.
  • Carefully place the patties in the hot oil and fry for 4-5 minutes on each side, or until they are golden brown and the internal temperature reaches 165°F (74°C).
  • Once cooked, transfer the fritters to a paper towel-lined plate to remove any excess oil.
  • Serve the fritters hot with your favorite keto-friendly dipping sauce or a side of mixed greens.

Notes

For a dairy-free version, omit the Parmesan cheese or use a dairy-free cheese alternative.
Ensure not to overcrowd the skillet when frying the fritters; this helps them to cook evenly and become crispy.
