Ingredients

  • 2 cups broccoli florets (about 1 large head) (approx. 300g)
  • 1 cup shredded mozzarella cheese (approx. 4oz / 113g)
  • ½ cup grated Parmesan cheese (approx. 2oz / 56g)
  • 1 large egg
  • 1 jalapeño, finely diced (remove seeds for less heat)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Steam the broccoli florets until tender, either in a steamer or in the microwave with a bit of water. Once tender, finely chop the broccoli.
  • In a large mixing bowl, combine the chopped broccoli, shredded mozzarella, grated Parmesan, egg, diced jalapeño, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  • Using your hands or a spoon, form the mixture into bite-sized balls and place them on the prepared baking sheet. Flatten each ball slightly to form a small patty.
  • Bake in the preheated oven for 20 minutes or until the edges are golden brown and the cheese is bubbly.
  • Let the broccoli bites cool for a few minutes before serving, as they will be very hot.

Notes

For a crispier texture, broil the broccoli bites for an additional 2-3 minutes at the end of cooking.
You can add different herbs and spices to the mixture to suit your taste preferences.
These bites can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave.
