Ingredients

For the Salad

  • 1 lb ground beef (450 g)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 cup cherry tomatoes halved (150 g)
  • 1 cup cucumber diced (150 g)
  • 1 cup shredded cheddar cheese (100 g)
  • 4 cups romaine lettuce chopped (120 g)
  • ½ cup dill pickles chopped (75 g)

For the Pickle Dressing

  • ½ cup mayonnaise (120 ml)
  • 2 tbsp apple cider vinegar (30 ml)
  • ¼ cup pickle juice (60 ml)
  • 1 tbsp Dijon mustard
  • ½ tsp garlic powder
  • Salt and pepper to taste

Instructions

  • In a large skillet over medium heat, add the ground beef. Season with salt, black pepper, and garlic powder. Cook the beef, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes. Drain any excess fat and set aside to cool slightly.
  • In a medium bowl, whisk together the mayonnaise, apple cider vinegar, pickle juice, Dijon mustard, and garlic powder until smooth. Season with salt and pepper to taste. Adjust the dressing to your preference by adding more pickle juice for tanginess.
  • In a large bowl, combine the chopped romaine lettuce, diced cucumber, halved cherry tomatoes, chopped dill pickles, and shredded cheddar cheese. Once the ground beef has cooled slightly, add it to the salad mixture.
  • Pour the pickle dressing over the salad and toss gently until all ingredients are well coated.
  • Divide the salad into serving bowls and enjoy immediately. This salad is best served fresh but can be stored in the refrigerator for up to 2 days.
