Ingredients

For the Cauliflower Crust

  • 1 medium head cauliflower (about 2 cups riced, 300g)
  • 1 large egg (50g)
  • 1 cup shredded mozzarella cheese (100g)
  • ½ cup grated Parmesan cheese (50g)
  • 1 tsp garlic powder (4g)
  • 1 tsp onion powder (4g)
  • ½ tsp salt (3g)
  • ½ tsp black pepper (2g)

For the Toppings

  • ½ cup marinara sauce (120g)
  • 1 cup shredded mozzarella cheese (100g)
  • ¼ cup sliced pepperoni (30g) or any other toppings of choice
  • Fresh basil leaves (optional, for garnish)

Instructions

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking.
  • Remove the leaves and stem from the cauliflower head. Cut it into florets and pulse in a food processor until it resembles rice. You should have about 2 cups of riced cauliflower.
  • Transfer the riced cauliflower to a microwave-safe bowl and microwave for 5-7 minutes until cooked. Let it cool slightly, then place it in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial for a crispy crust.
  • In a mixing bowl, combine the cooked cauliflower, egg, shredded mozzarella, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well incorporated.
  • Divide the cauliflower mixture into 8 equal portions. Shape each portion into a small bagel shape (or simply form into rounds) and place them on the prepared baking sheet. Flatten each piece slightly to resemble a bagel bite.
  • Bake in the preheated oven for 15 minutes, or until the edges are golden and the crust is firm.
  • Remove the baking sheet from the oven. Spread about a teaspoon of marinara sauce on each cauliflower bagel bite. Top with shredded mozzarella cheese and your choice of toppings, such as pepperoni.
  • Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy your delicious, low-carb pizza bites!

Notes
