Ingredients

  • 1 medium head green cabbage (about 2 lbs / 900 g)
  • 1 lb ground pork (or chicken/beef)
  • ½ cup finely chopped onion
  • 2 cloves garlic minced
  • ¼ cup soy sauce (or coconut aminos for a soy-free option)
  • 1 tsp grated ginger
  • ½ tsp black pepper
  • ½ tsp salt
  • ¼ tsp red pepper flakes (optional)
  • 1 tbsp sesame oil
  • ¼ cup chopped green onions
  • 1 tbsp fresh cilantro chopped (optional)

Instructions

  • Bring a large pot of water to a boil. Carefully remove the core from the cabbage head and place the whole cabbage in the boiling water. Blanch for about 3-5 minutes, until the outer leaves are tender. Remove the cabbage and let it cool slightly before peeling off 12 large leaves. Set aside.
  • In a large mixing bowl, combine the ground meat, chopped onion, minced garlic, soy sauce, grated ginger, black pepper, salt, red pepper flakes (if using), sesame oil, chopped green onions, and cilantro. Mix well until all ingredients are fully incorporated.
  • Take one cabbage leaf and place about 2 tablespoons of the filling in the center. Fold the sides of the leaf over the filling, then roll it up from the bottom to create a tight dumpling. Repeat this process with the remaining leaves and filling.
  • In a large skillet or frying pan, heat a little oil over medium heat. Place the dumplings seam-side down in the pan and cook for about 2-3 minutes until browned. Carefully flip and add about 1/2 cup (120 ml) of water to the pan. Cover and steam for about 15-20 minutes until the dumplings are cooked through and the cabbage is tender.
  • Remove the lid and let any remaining water evaporate. Serve the dumplings hot, drizzled with extra soy sauce or sesame oil if desired.

Notes

Feel free to customize the filling with your choice of vegetables or spices. These dumplings can be frozen before cooking; just steam them directly from frozen, adding a few extra minutes to the cooking time.
